Have you guys hopped on the zoodle (zucchini noodle) train yet?! I have been kind of obsessed with zoodles for quite awhile now. They’re really simple to make with a spiralizer and they have about ⅛ of the carbs and calories of regular white pasta. If you’re like me and refuse to sacrifice you favorite pasta dishes for a better body then this is the perfect alternative for you!
I usually saute my zoodles in olive oil and season them with a little sea salt and black pepper. I could eat them nonstop that way but there is so much you can do with zoodles. I’ve eaten them “raw”, made soup with them, and even baked them with some spaghetti sauce and cheese. They are so versatile and easy to work with. Today I’m sharing some simple and yummy recipes for zoodles that you’ll be instantly addicted to.
First up, Shrimp Scampi. I love seafood 🍤 and shrimp scampi is among my favorite seafood dishes but with all that butter AND pasta, it can pack a lot of carbs and calories that we just don’t need. Thank goodness for zoodles! 🙌
I promise I never wanted to stop eating this dish the first time I made it. SO GOOD! And the best part is NO GUILT! There’s no after-meal bloat and gross feeling. Just heavenly goodness.😊😊😊
I really enjoy plain buttered noodles smothered with tons of Parmesan cheese but that’s basically a one way ticket to clogged arteries and heart disease.😏 So these Spinach Parmesan Zoodles are a great alternative.
All the flavor but none of the guilt! These are a great quick meal option.
Just a quick note that zoodles cook very quickly! Be careful not to overcook them or you’ll be left with a soggy (but still tasty!) mess. I promise you won’t miss regular pasta using zoodles and you waistline will thank you!
